Ingredients
6cupswatermelonchopped into 1-inch squares
2cupsjicamapeeled and chopped into 1-inch squares
1/4cupred onionsdiced
1/2cupfresh arugulalightly chopped
2tablespoonsfresh mintchopped
1tablespoonfresh basilchopped
Dressing:
2tablespoonsred wine vinegar
1tablespoonlime juice
Instructions
Combine watermelon, jicama, onions, herbs, and salt in a large mixing bowl. For the dressing, whisk together the dressing ingredients. Pour dressing over salad and lightly toss. Serve immediately.
