- 3 cups English cucumbers (approximately 2 English cucumbers) peeled and chopped
- 1 medium avocado
- 1 cup fresh coconut milk or reduced-fat canned coconut milk
- 3 tablespoons lime juice
- 3 mint leaves
- Garnish: fresh mint leaves, diced cucumbers (optional)
Blend all ingredients in a high-speed blender until you've reached a smooth consistency.
Chill in refrigerator for approximately 2 hours before serving. Garnish with mint leaves and diced cucumbers. Enjoy!
