Ingredients

  • 3 cups English cucumbers (approximately 2 English cucumbers) peeled and chopped
  • 1 medium avocado
  • 1 cup fresh coconut milk or reduced-fat canned coconut milk
  • 3 tablespoons lime juice
  • 3 mint leaves
  • Garnish: fresh mint leaves, diced cucumbers (optional)

Instructions

  • Blend all ingredients in a high-speed blender until you've reached a smooth consistency.

  • Chill in refrigerator for approximately 2 hours before serving.  Garnish with mint leaves and diced cucumbers.  Enjoy!
