This delicious and wholesome vegan Pineapple Unfried Rice is perfect as a side dish or as your main meal! Unlike traditional fried rice, this recipe is free from oil, which makes it so much more healthy, yet flavorful!
Vegan Pineapple Unfried Rice
This very tasty rice dish is perfect for a summer meal and a whole lot healthier than traditional fried rice! The sweet and tangy flavor of the pineapple adds a nice addition to this recipe.

Ingredients
- 1/4 cup vegetable broth low-sodium
- 2 stalks green onions chopped
- 1 clove garlic minced
- 2 carrots chopped
- 1/2 cup green peas
- 1 1/2 cups pineapple chopped
- 2 cups cooked brown rice
- 1/2 cup cashews
- 1/4 cup raisins
- 2 tbsps lemon juice
- 3 tbsps soy sauce or coconut aminos
Instructions
- Heat a large non-stick skillet over medium-high. Saute both the green onions and garlic in the vegetable broth for approximately 2 to 3 minutes.
- Add in the rest of the ingredients and lower the heat to a medium-low.
- Continue cooking and stirring the rice mixture for approximately 10 more minutes. Serve and enjoy! 🙂
