This vegan keto peanut butter cookie recipe is so simple and delicious! You’re not missing out on any of your favorite cookies when on a vegan keto diet with this recipe! Satisfy your peanut butter craving with this tasty cookie!
This particular recipe uses whole psyllium husks to help bind the dough. I find that the flakes binds the cookie together pretty well. For the sweetener, I use Lakanto’s Monkfruit Sweetener to replace the granulated sugar. You can find the full recipe on the recipe card down below. I honestly feel like these cookies are much better than regular sugar filled peanut butter cookies in that it is just as sweet and crunchy! These cookies are best consumed with a warm glass of almond milk!
Peanut Butter Cookies (Vegan Keto)
Ingredients
- 1 cup almond flour
- 3 ounces sugar-free granulated sugar such as Lakanto's Monkfruit Sugar Substitute
- 1/4 tsp sea salt
- 1/2 cup peanut butter
- 1 1/2 tbsps coconut butter
- 1 tsp vanilla extract
- 2 tbsps whole psyllium husks
Instructions
- Preheat oven to 350 degrees F.
- Prepare a baking sheet covered with parchment paper or a silicone mat.
- Mix together the dry ingredients.
- Mix together the wet ingredients to form the dough.
- Roll the dough into 1 1/2-inch balls.
- Place on baking sheet and flatten with a fork one way and then the other to create a crisscross pattern.
- Bake for approximately 10 minutes. Let cool completely before serving.
