-3 cups English cucumbers (approximately 2 English cucumbers), peeled and chopped
-1 avocado
-1 cup fresh coconut milk or reduced-fat canned coconut milk
-3 tablespoons lime juice
-3 fresh mint leaves
-Garnish: fresh mint leaves, diced cucumbers (optional)
Directions
